Many guests arrive at the Rainforest Inn for the exotic setting, the lush rainforest, and the peaceful escape from everyday life. Yet time and again we hear the same thing from our visitors. The highlight of their stay is breakfast.

After drifting to sleep to the gentle rain and the music of coquí frogs, you’ll wake to the aroma of fresh coffee and a hot, made-from-scratch breakfast just steps from your door.

Each morning at 9:00 AM, we serve a fresh, healthy, and satisfying meal designed to fuel your day of adventure. Join us in the open-air breezeway, or take advantage of one of our additional breakfast service options. However you choose to dine, we promise a delicious start to your rainforest morning.

Our Breakfast Philosophy

We know your time on the island is limited, and while part of you may want to simply relax here at the Inn, our daily vegetarian breakfasts are meant to give you the energy you need for the day ahead. Whether you plan to surf at Luquillo Beach or explore our semi-challenging Lost Machete hike, we hope breakfast will be a highlight of your morning.

Each day we prepare one boutique breakfast entrée using fresh ingredients and tropical flavors. If your tastes are a little different, or if you have allergies or dietary preferences such as vegan or gluten free, we are happy to provide a simpler but still delicious alternative. We just ask that you let us know in advance.

If you need to leave the Inn early, before breakfast concludes at 9:30 AM, please let us know. We can prepare a healthy breakfast tray and deliver it to your room the night before so it is ready for you in the morning.

To-Go Breakfast
If you need to leave the Inn early, we are happy to prepare a healthy to go breakfast for you. Just let us know the day before and we will have it ready so you can start your morning adventure well fueled.

Or, let us spoil you! Keeping with our goal of romantic privacy, you can use our in house text message system (WhatsApp) to request breakfast delivered directly to your suite. Instead of coming down to the breezeway, we will bring the day’s breakfast to you so you can enjoy it from the comfort of your porch.

We also offer a special gourmet breakfast in bed tray with champagne for an additional charge. This tray can be ordered the day before and will be delivered to your suite at 9 AM.

If you are planning to explore the Lost Machete hike, we also offer a picnic lunch to take with you. It is a wonderful experience to relax at the waterfall pool at the end of the trail and enjoy a picnic in the rainforest.

Please remember to request these add ons at least 24 hours in advance. Breakfast is always served promptly at 9 AM.


Guava Stuffed French Toast Recipe

We will be sharing more of our recipes soon, though it can be hard to convince René to part with some of her secrets.

“Pan de sabao” is a sweet, freshly baked bread commonly found in Puerto Rican bakeries. French bread can be substituted if needed.

Ingredients

For the French Toast

8 slices of good pan de sabao
4 eggs (farm fresh if possible)
1/4 cup half and half cream
Dash of nutmeg
Dash of cinnamon

For the Filling

1 package cream cheese
1 package pasta de guava

Preparation

Slice the pan de sabao into slices about 1 1/2 inches thick. Carefully cut a slit into each slice to create a pocket, being careful not to cut all the way through the bread.

Warm the pasta de guava in the microwave for a few seconds until it becomes soft and spreadable. Spread about one teaspoon of guava paste and one teaspoon of cream cheese inside each slice of bread.

In a bowl, whisk together the eggs, half and half, cinnamon, and nutmeg until light and fluffy. Dip the filled slices of bread into the mixture on both sides, being careful not to allow the egg mixture to enter the filling. Let the bread rest for about fifteen minutes.

Heat a griddle or hot plate and coat it with butter. Cook the French toast until golden brown on each side. Butter is important for achieving the perfect browning, but be careful not to overcook.

To Serve

Serve with genuine maple syrup and a light dusting of powdered sugar. Add fresh tropical fruit and home fries for a complete breakfast.

(Our home fries include René’s special herbs de Provence blend, though that recipe may remain one of her secrets.)
